Kaiserschmarrn with stewed plums and a coffee to go with it - that's how wonderful it is to enjoy the ski huts in Flachau.

Recipe idea: Kaiserschmarrn

Ingredients for 4 people
210g flour, 0.5l milk, 75g sugar, pinch of salt, 6 eggs, lemon zest of half a lemon, small dash of rum (optional), butter for frying

Preparation
Preheat the oven to 180 degrees. Mix the flour, milk, sugar and a pinch of salt until smooth, then mix in the eggs with a whisk. Refine the batter with lemon zest and rum to taste. Place 1-2 tablespoons of butter in an ovenproof pan, heat over a medium heat so that the butter melts, pour in the batter. Allow the batter to set for two minutes, then turn over. Remove the pan with the batter from the heat and bake in the oven for approx. 12 minutes. At the end of the baking time, tear the Kaiserschmarrn into small pieces with two forks and toss in a little melted butter and sugar. Sprinkle with icing sugar to serve.

Tip: It goes well with plum roaster, elderberry roaster, apple sauce or cranberries.
